It is the island group of Vava’u in the north of Tonga where its islands rise from the iridescent waters that surround the emerald green islands and their white sandy beaches, that the fishing is at its best. Troll Vava’u’s crystal clear waters for Blue, Black or Striped Marlin, Sailfish, Mahimahi, big Yellow Fin Tuna and Wahoo. Spear fish or cast jigs or poppers for predators like Blue Fin and Giant Trevally. Virtually all species of tropical fish frequent Tongan waters, and with its vast areas of reef structure, drop offs, canyons and seamounts, as well as several offshore F.A.D’s, every angler can experience a smorgasbord of tropical fishing. Saltwater fly-fishing is also becoming popular.

Warm up this winter with this awesome
 60g butter- 2 spring onions(chopped)
- 3 rashers of bacon
- 1/3 cup flour
- pinch of cayenne pepper
- salt & pepper
- 3 cups of fish stock
- 2x medium spuds(cubed)
- 300g tin cream style corn
- 2/3 cup sour cream
- chopped parsley
- 100g crab meat
- 12 mussels (chopped)
- 160g shrimps(peeled)
- 150g cubed fish fillets
Other fish ingredients can be substituted or added - crayfish and scallops work...
Melt the butter in a pan. Add the spring onions & bacon and fry until softened. Stir in the flour, cayenne, and salt & pepper to taste and cook for 1 minute.
Gradually add the stock and bring to the boil. Add the seafood ingredients, the corn & potatoes & simmer for 15 minutes, or until potatoes are soft but still hold their shape. (An alternative is to have a 50/50 mix of potato & kumara and add as mash for a thicker chowder.)
Stir in the sour cream. Sprinkle with parsley to serve.
